This quick and easy veggie brunch, is so simple to make and tastes delicious! i literally whipped this up in about 20 minutes and i wanted to eat the leftover bits that i saved for tomorrows lunch it was so tasty.
5 – 7 baby new potatoes
1 sweet potato
2 cloves of garlic
Tin of mixed beans in water or vinegar
1 tsp Cajun Spice
0.5 tsp Paprika
Salt and pepper to taste
Knob of butter x 2
Creme Fresch to serve
Chop up the new potatoes and sweet potato into bite sized chunks and boil until fully cooked, once cooked drain water.
Heat up a large frying pan and add the knob of butter. Peel the shallots and garlic and then add to the butter in the pan and allow to brown.
Once garlic and shallots are browned nicely, add potatoes, Cajun spice, paprika and salt and pepper to the pan and fry for around 5 minutes until the potatoes start to brown. if the mixture is starting to dry out a bit, add another knob of butter.
Drain and rinse beans and add to the pan. continue to stir for another minutes or so, until all ingredients and brown and simmering hot.
Server on a place and add a big dollop of Creme fresch, sprinkle with Cajun and serve nice and hot.
Tip: try swapping creme fresch for a fried egg for total lazy brunch yumminess x
